So in honor of my departure today for Sweden (AHHHHH), I thought I would bring a simple and easy lunch to you. Like so easy I’m embarrassed to be writing this down as a recipe. But you know, it’s what I ate for lunch this week to prepare myself for the amazing Swedish food I’m going to be eating for the next two weeks, and you might not have realized to make this for lunch!
It’s simple. It’s whatever bread you like, toasted. You slather on cream cheese, depending on how much you prefer. I like it to be cream cheese heavy, but that’s just me. Then I layer on the salmon and pour on the capers. I LOVE capers. When I was little, I said I wanted to marry caper and green olives. If only..
Anyway, simple is wonderful, especially when you’re working and trying to get everything together to go to SWEDEN! I was able to bake/cook enough so the blog will be okay in my absence 🙂 I’m going to try and keep up my posting schedule while I’m away – some posts will be written in advance, some the night before. There are some delicious things coming your way. But in the meantime? Eat some toast.
Salmon Toasts
makes one toast
2 oz Smoked Salmon
3-5 tablespoons Whipped Cream Cheese
1 tablespoon Capers
Sliced Bread
Black Pepper
Toast bread. Spread desired amount of cream cheese over the toast. Layer smoked salmon and top with capers and fresh cracked black pepper.
