Happy (early) Valentine’s Day! While I might not usually celebrate Valentine’s Day (hello, long distance), I definitely celebrate Galentine’s with friends, wine, and chocolate. Lots of chocolate. Now if you are celebrating with someone and you just want a little bit of dessert, these chocolate cupcakes for two are just the ticket.
The recipe is from The Baker Chick and it’s one of my favorite go to small batch cupcake recipes. The frosting is my adaptation of her frosting, adding Nutella to it because, well, Nutella makes everything better. More importantly, these cupcakes are here for a good cause today.
I’m so excited to participate in the Cookies for Kids’ Cancer Valentine’s event (again). This is the fourth year for our event and we want to continue to make a difference in the fight against pediatric cancer.
Cancer is the #1 cause of death of children by disease in the U.S. There are 40,000 U.S. children actively battling cancer right now. The National Cancer Institute’s budget for childhood cancer is less than 4%. It’s such a small number and that’s why I got involved.

Our goal is to raise at least $3000. Because these three companies: OXO, Mediavine and Dixie Crystals have each pledged to match our donations raised through this campaign up to $3000! That means when we raise $1, it turns into $4!

Ingredients
For the cupcakes:
- 3 tablespoons flour
- 2 tablespoons sugar
- 1 1/2 teaspoons dark cocoa powder
- 1/8 teaspoon baking soda
- Pinch of salt
- 2 tablespoon water
- 1 tablespoon vegetable oil
- 1/8 teaspoon of vanilla extract
For the frosting:
- 2 tablespoons of unsalted butter, very soft
- 1 tablespoon Nutella
- 1 tablespoon of dark cocoa powder
- 4-5 tablespoons of powdered sugar
Instructions
- Preheat the oven to 350 F. Line a muffin pan with two cupcake liners in the center of the pan.
- Whisk the flour, sugar, cocoa powder, baking soda, and salt in a small bowl.
- Add the water, oil, and vanilla extract. Whisk together until smooth.
- Add the batter to the two liners, making it as even as possible. Bake for 15-20 minutes, or until a toothpick comes out clean.
- While cupcakes cool, prepare frosting. Mix the softened butter and Nutella until well combined. Mix in cocoa powder. Add the powdered sugar one tablespoon at a time, until you reach the desired consistency.
- Frost cupcakes and enjoy!
