I am loving salted caramel sauce right now.
I am drizzling it over literally anything I can – my finger, cookies, cupcakes, walnuts, ice cream – you name it. I have a list of all the different things I want to make with it – a glaze for donuts, an addition to a chocolate milkshake, a gooey center for cookies and/or brownies. The fact that the jar I have in my fridge is almost gone is distressing. Help me.
It’s been awhile since I made a Rice Crispy treat (I still can’t figure out what to exactly call them/how to spell them – Crispy, Krispie, Krispies. Is it just a question about brands?) with these s’more treats and even longer since I had made these pumpkin treats. There’s something so deliciously simple about these marshmallow treats. It’s a taste of childhood though they’re so much better tasting when they’re homemade versus the prepackaged rice krispie treats in the blue shiny plastic.
Speaking of childhood, I know everyone by now has seen and heard about Batkid. How wonderful was that? I had read about him the night before San Francisco turned into Gotham City and then followed along the next day as he saved a damsel in distress, rescued the mascot, and received a chocolate key to the city. It was amazing to see thousands of people come together for one boy entering remission from leukemia. It definitely restored my faith in humanity. I wish I could have made these for him, too, so he had another sweet taste of childhood.
Anyway, these delightful treats have the traditional sweetness from the marshmallows with the added joy of the caramel flavor mixed in. To cut through sweetness, I sprinkled some Maldon sea salt flakes on top which added just enough salt to the top. Share these with some friends! They’ll love you for it.
Salted Caramel Rice Crispy Treats
makes 12-15 treats (depending on size)
6 cups crispy cereal
1 10.5 oz bag mini marshmallows (or 1 10-oz bag regular size)
3 tablespoons unsalted butter
1/2 cup salted caramel sauce
Spray a 9×13 pan liberally with a non-stick cooking spray (or a 9×9 pan if you want thicker treats).
In a large bowl, add the crispy cereal. Set aside.
In a large saucepan, melt butter over medium-low heat. Add the bag of marshmallows. Stir mixture frequently until completely melted and smooth. Add in the salted caramel sauce and stir until the sauce is mixed in completely. Pour the melted marshmallow mixture over the cereal. Use a large spatula or wooden spoon coated in cooking spray and mix together until well combined and evenly coated.
Pour cereal mixture into the prepared pan, pressing the mixture down so it is even and reaches all the corners. Let cool and cut into desired shapes/sizes.
